This is only the second Chanterelle (Cantharellus cibarius) mushroom that I've found in the woods in this dry year. Even last winter, which was also dry, we found lots of them - but this year they are downright scarce. (San Marcos Pass, 17 March 2013)

Chanterelles are edible and delicious, and they're easy to recognize once you've see a few. Find a mushroom guru to learn from. Flygrl67 is the Chanterelle Queen this year!

This is the first - and so far the only - Chanterelle (Cantharellus cibarius) mushroom that I've found in the woods this year. It's small, only about 3 inches long, growing along our driveway where I've found them before. You can recognize it as a chanterelle because the blunt "gills" are really just folds in the fertile surface. This one will become part of our dinner tomorrow! (San Marcos Pass, 5 March 2013)

It's odd that they are so late this year, since they have been early mushrooms in the few years. See this photo from December 4, 2010.

While we're on the topic of mushroom cookery...

Here's a pan of yummy Chanterelle (Cantharellus cibarius) mushrooms "stewing in their own juices". It's really remarkable how much juice these mushrooms make in a hot pan, especially after a rain. (San Marcos Pass, 15 December 2011)

We "dry sauté" them. Clean your Chanterelles with as little water as possible - they are like sponges. Then slice them into a pan on high heat with no oil, and they will make their own sauce as the water cooks out of them. Stirring with a hand-whittled wood spoon must help! Let the juice cook down until it's almost gone, and add a bit of olive oil, salt, and garlic and let it simmer... delicious!

This old photo from the archives makes me hungry! We haven't seen a single Chanterelle or good Bolete all winter, but every mushroom year is different. Maybe tomorrow?

Chanterelles are easy to recognize once you've seen them - but you have to learn for yourself. They are yellow-orange, and they have blunt folds underneath rather than sharp gills. Books and photos help, but you really have to learn the mushrooms from another person who knows, and then you will know.

I've been house-bound all day preparing the new Santa Ynez Valley Natural History Society newsletter - and it's been raining all day! Today's photos are from the archive, showing some of the mushrooms I haven't found yet this year, but should have. Every year is different, especially with mushrooms.
