&lt;p&gt;I couldn't wait to play with my new toy (mechanical pastry bag), so I opened the cabinet to see what can I &amp;quot;bake&amp;quot; . .  . I knew I wanted to try to bake some red velvet cupcakes from scratch (I've never done so before) but darn I didn't have enough flour . . . I had some boxed cake mix so I went on-line to find a recipe for red velvet cake using a boxed cake mix . . . (gotta love the internet!!).  I found a recipe so all I added was the cocoa powder, eggs, milk, oil, red food coloring and a few drops of pure almond extract. . . . I then made the cream cheese frosting.  It was so easy using my new toy!  P.S.  While the cupcakes were baking, I even had time to take Toby out for a good 20 minute walk.  ;-)&lt;/p&gt;</description>

&lt;p&gt;Today I stayed home from work . . . one of those days when I needed my own personal time off.  Well, as I said, baking for me is quite therapeutic.  (Too bad I don't find &amp;quot;cleaning&amp;quot; therapeutic or else the house would be spotless. . . Ha! Ha!)  Baking is fun because I get to make whatever goodies I have a craving for.  I usually like to have on hand cream cheese, powdered sugar, different nuts, and baking cocoa because I never know when I have the urge/need to bake.  ;-)  BTW . . . I baked 2 dozen of these red velvet cupcakes and brought a dozen to my halau (hula class) this evening.  ;-)&lt;br /&gt;
