Black Raspberry Preserves

queenofthemoodswingset2 posted a photo:

Black Raspberry Preserves

I basically followed the Berry Preserves recipe from Ball's Blue Book guide to preserving. (the original recipe called for 2 lbs berries, and 4 cups sugar). I originally tried to not use any pectin but it wouldn’t set. I ended up adding most of a bag of liquid pectin. This was probably a bit too much so next time I’ll probably use ¼ to ½ of the pectin package.

8 cups black raspberries (crushed) about 2 ½ lbs
4 1/2 cups sugar
¾ package of liquid pectin (if needed only)

boil until the berries reach the right consistency (if it won’t gel, then add the pectin) and then can in a water bath for 15 minutes. Canning procedures can be found here: nchfp.uga.edu/how/can_home.html

queenofthemoodswingset2 posted a photo:

I basically followed the Berry Jam recipe from Ball's Blue Book guide to preserving. (the original recipe called for 9 cups berries crushed, and 6 cups sugar)

5 cups blackberries (crushed)
3 cups sugar

boil until the berries reach the right consistency and then can in a water bath for 15 minutes. Canning procedures can be found here: nchfp.uga.edu/how/can_home.html
