The farmers collect seagrass and mud from the bottom of the lake bed, make a thick bed securing with bamboo poles and grow vegetables and fruits.
I'm sure it involves more complex steps, but this is what I understood. We came across many locals gathering the seagrass and piling it on their canoes for their floating gardens.

The farmers mainly grow gourds, flowers and tomatoes. The tomato salad from this area is quite a popular dish served in restaurants. Yes,the lake has a floating school, post office, lots of restaurants and entire villages complete with village streets.
It is such a tranquil and beautiful lake and staying on the lake gave us a nice peek into the daily lives of the people who live there.

The rowing is done with a leg wrapped around the stick in a snake like motion. Fascinating to watch.
