Menu created by Nathan Isberg with a little bit of inspiration provided by a bison tongue and heart. Amazing and entirely unexpected, he went above and beyond the call of duty and I hope we rewarded him adequately with some truffle honey.

Offal Dinner: 36 Hour Braised Beef Cheek with Cardamom Braised Bison Tongue

The most tender and moist beef cheek I have ever consumed in my entire life. It pulled apart easily and was wonderfully tender. Thin slices of tongue really brought in the richness and helped make the dish absolutely remarkable. Didn't hurt that the turnips brought in that day were delicately sweet and glazed with the truffle honey I gave Nathan.

Second helpings were offered but our stuffed stomachs left us strongly debating the suggestion though in the end refusing so as not to bust our belts.

My favourite sweetbreads were provided by Nathan and while he didn't disappoint this time around they weren't as crispy as I last remembered. The silken interior was quite lovely though and the heart did its best as second fiddle though garnished with amazing crunchy candied chestnut. The bitter slaw was a wonderful little mix and offered a good counterpoint to keep the rich dish in line.

Lovely lightly infused bisque with an airy consistency that made it feather light on the palate. Crunchy romanesco and crispy morcilla (Spanish blood sausage) slice to give a little textural contrast and a delightful start to our offal dinner.

Lovely, creamy and light pot de creme with a delicate balance of sweetness that was perfection (sometimes I find sweet just too sweet!). Didn't detect much bergamot in the poached pear but I was so distracted by the chocolate and savouring my memories of the dishes before.

Never can decide if I should venture forward and just chow down on the head, but I decided that the body was more than enough for me. The fatty pork flavour married incredibly well with the sardine and complemented each other fantastically. The fennel fronds and pollen on top were taken from the sous chefs private garden and gave the dish a fresh tang. Can't forget about the beans but the sardine completely stole the show.
