This is my main weapon for holding the apocalypse at bay (other than my brain): A whole mess of bacon, pancetta, salt pork, and guanciale needs to cure for at least a week before being roasted or hung for air-curing. Take that, apocalypse!

Very nice --the crust has an almost marzipan-like nutty toothsomeness to it. Pear tart cake with home-made cinnamon ice-cream. Gonna try this with apple next time around. Or plums!

Me & Jenn agreed we could eat about a bajillion of these. So tasty: Latke (potato pancake) on the bottom, a piece of smoked salmon, a dollop of crème fraîche, and some caviar. Not fancy caviar, but salty and texturally fabulous nonetheless. I love popping the little jet-black eggs between my teeth.

This stew of winter veggies, a mix of my own dry beans, and a Devon beef cheek: fantastically delicious. Stews always taste better than I expect them to. How fat and tender are those beans? Very fat & tender & creamy is how.

Carmelized pineapple? YUM. Making this at home is ten thousand times better than at most pizza joints as most pizza joints tend to under-bake pizzas, imo.
