Scottish Crab Cakes

Crab cakes and new potatoes. mmYum mmYum!

Cooked white meat from 1 large brown crab (edible crab)
bread crumbs (4 thick slices whole meal bread in a blender)
1 beaten egg
3 spring onions (green onions/scallions) chopped finely
1 bunch flat-leaf (Italian) parsley chopped finely
½ tsp Salt
Freshly ground black pepper
½ tsp Spanish smoked paprika (or Cayenne pepper if you prefer it spicy)
½ tsp garlic powder

Put half the breadcrumbs on a tray in a very low oven, until they dry out fully - but not browned. In a mixing bowl, break up the crab meat with a fork, add the beaten egg, salt and black pepper, chopped spring onions and parsley, and the remainder of the breadcrumbs. Mash together well with your hands. Use wetted hands to form the crab cakes - approx ½ inch thick and 2 inches in diameter. Add more breadcrumbs if the mixture is too moist.

Take the dried breadcrumbs out of the oven, leave to cool, sprinkle the breadcrumbs with paprika, a pinch of salt, black pepper, and garlic powder - mix well. Dip the crab cakes into the seasoned bread crumbs, coat well pressing the breadcrumbs onto the crab cakes.

Fry in a pan, with a little oil, until golden brown, 3 minutes each side (or until cooked through).

Serve with boiled new potatoes.
