I've always wanted to take a Snow White themed photo. Those of you who know me a bit longer know I'm a sucker for red accents.
I'll play with this a little bit more over the next few weeks.
Very happy to have stepped out of my comfort zone. Definitely feeling more brave now.

I have some new photos to share that I took over the weekend but Wil and I both seem to have caught a nasty bug and have been spending most of the day hanging on the sofa watching crap tv. :/

A great motivator: to see the hard work I've put into my book review project so far. I'm excited (for the first time in a long time) to see this set of photos grow as I enter my 6th - hopefully more productive - year of book reviewing.

Rocket Risotto

I already had a massive rocket salad earlier that day, and still had enough left for 2 more massive salads. Sounds good for lunch tomorrow, but not for dinner again tonight. I wanted a good filling meal. So I thought... how about a rocket... risotto? So here's what I came up with.

- Garlic & Shallots in olive oil
- adding Spinach and Rocket lettuce, sauté briefly
- Add risotto, fry for a while until somewhat glazy (couple of mins)
- Turn heat low
- Add some white wine until risotto soaked everything up, then switch over to stock or in my case vegetarian bouillon, adding bits to risotto and letting it soak up... repeat... repeat... until done.
- Add spices such as a pinch of salt and black pepper. I added just a hint of Italian spices and quite a good bit of ground red chili pepper.
- Upon tasting I felt it missed something, so I added some fresh lemon juice. Mmmm :)
- When risotto is done, add grated parmeson or in my case grana padano cheese and a bit of cream (I used a very low fat cooking cream), stir, put lid on and let sit for a couple minutes. Salt & pepper to taste.
- Serve with bit of extra grated cheese on top. And done.

Delightful.

It's in those little things

Another one of my resolutions for this year is to take more quiet time to enjoy little things... good food, a good book, a new magazine, a cup of tea, sunlight on my face... and just breathe, breathe, breathe.

I'd like to keep taking photos of this too. You have no idea how dark it was inside the house when I took this photo. It's one of those no-sunlight winter days... and somehow I never trust my camera to be able to handle it. It can. So I won't be discouraged by darkness anymore.

Yesterday I made pumpkin / feta / zucchini / pesto pastries in the oven (delicious, mostly I think because I made the pesto myself as well, not TOO salty!) and today with the leftovers that didn't fit into the pastries, I made a huge fluffy omelette. Nom nom :)
