steamboatwillie33 posted a photo:

Simple full of flavor and a pretty presentation too!

1 Lemon box cake mix

(Or your favorite lemon cake recipe) 9x13 baked and cooled.....

I always add an extra 1-2 tsp of lemon extract to my batter for more lemony flavor!

1 8-oz cool whip -thawed

2 or more cups of your favorite lemon curd store bought or home made.

1 cup white chocolate chips

1 lemon to Zest for garnish

After cake is baked and cooled use the end of a wooden spoon to poke the top full of holes and

Pour your lemon curd over the cake using a spatula or spoon to spread the lemon curd into the holes.

Cover the cake top with the cool whip and sprinkle on your white chocolate Chips and lemon Zest!

Refrigerate and /or Enjoy!!

Notes..... I used some lemon curd I already had and wanted to use up I should have warmed it slightly to make it more pourable and drip through the holes more but it was super tasty as is :)

You might also want to save some lemon curd to drizzle over the cool whip as well!

Happy St Patrick's day!

Absolute Deliciousness( is that a word) everything about this cake is amazing!
You really can eat it without the icing though you will see where you poked the holes for the glaze but the flavor of the cake alone is amazing !

CAKE

1 3-oz package lime-flavored gelatin( dry)

1⅓ cups granulated sugar

2 cups sifted all-purpose flour

½ tsp salt

1 tsp baking powder

1 tsp baking soda

5 large eggs, slightly beaten

1½ cups vegetable oil

¾ cup orange juice( I juiced two fresh Oranges)

1 Tbsp lemon juice

½ tsp vanilla extract

Glaze..
½ cup Key lime juice (from about 25 small Key limes or 4 large regular limes)
½ cup confectioners' sugar
(I used a combination of fresh limes and Nellie & Joe's Key West Lime juice)

1.Preheat the oven to 350°F. Grease and flour a 9x13 cake pan.

2. In a large mixing bowl, mix the gelatin, sugar, flour, salt, baking powder, and baking soda.
Stir to mix well.
Add the eggs, oil, orange juice, lemon juice, and vanilla. Add the batter to the 9x13pan and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops of the layers or inserting a toothpick. Cool the cake in the pan for 5-10 minutes, then turn out onto cooling rack with a tray underneath to catch the glaze

3. While the cake is still hot, mix the lime juice and confectioners' sugar pierce the cake with a fork to allow the glaze to soak in better and pour it over the cake on the rack Allow the cake to cool completely as you prepare the icing.

CREAM CHEESE ICING

½ cup (1 stick) butter, room temperature

1 (8-oz) package cream cheese, room temperature

1 (1-lb) box confectioners' sugar

1. Cream the butter and cream cheese. Beat in the confectioners' sugar until the mixture is smooth and easy to spread. Spread the icing between the layers and on the top and sides of the cake.

Note: The cream cheese icing is optional. This cake tastes great with just the glaze poured over it.
Store in refrigerator ..
Banana Poke & Pour Cake...

steamboatwillie33 posted a photo:

Another Oldie but goodie...
Have made these for many many years..
Though I didn't remember a banana flavor but hey I'm old now :))
So when I ran across it on line in banana I made one for Our July 4th cookout!
Fantastic and was a Hugh hit( and gone) in record time.
A refreshing summer treat!

Ingredients:
1 box yellow cake mix
Plus ingredients needed to make cake (eggs, oil & water)
2 (3.4 oz.) packages instant banana pudding-It's the smaller size box( I used banana cream Pudding)
4 cups milk
1 (8 oz.) tub frozen whipped topping, thawed
30 vanilla wafers, crushed( not powdered) Leave a few larger pieces
Works great and is Amazing with fat free or low fat ingredients!

Directions:
Prepare cake mix according to package directions for a 9x13 cake.
Once cake comes out of the oven, allow it to cool for just a couple of minutes.
Then, with a wooden spoon handle , begin poking holes in the cake.
You want the holes to be fairly big so that the pudding has plenty of room to get down in there.
Be sure to poke right down to the bottom of the cake.
In a bowl, prepare pudding.
Whisk together instant pudding with 4 cups milk.
Stir until all the lumps are gone.
Let pudding sit for just about 1 minute so it has just slightly begun to thicken but not fully set, it should still be easily pourable.
Pour pudding over cake. Taking care to get it into the holes as much as possible.
Spread it all out and using the back of the spoon gently push pudding down into the holes.
Put the pudding/ cake into the fridge to set and cool.
Once your cake has completely cooled, spread on whipped topping.

Spread crushed wafers onto the top of the cake. You can do this part immediately before serving the cake if you like.
This will ensure the wafers are crunchy when you serve it.
I think this cake gets more delicious over time.
To me, it's even better the next day so it's a great dessert to make ahead of time.
Serve with freshly sliced bananas.
Keep refrigerated.
Yes you can freeze it :)
NOTES.....
You can also add a layer of sliced bananas on top of the pudding layer but you really need to eat the cake that day as the bananas will start to turn brown after that !
Also good served with a few fresh strawberries....
Found the banana flavor at The Country Cook

This is by far one of the best Strawberry cakes out there!
It is moist and bursting with flavor not to mention the cream cheese icing that puts it over the top .
You have to admit it looks awful pretty too!

I would have liked to have added a thick layer of the icing between the layers but hubby is not a big icing fan so I kept it light ( Big baby) LOL...
Plus it may have made it super sweet! ( for us)

Strawberry batter.
www.flickr.com/photos/steamboatwillie33/5906464926/in/pho...

Strawberry Cake with Strawberry Cream Cheese Frosting

Cake
1 18.25-ounce box white cake mix
1 3-ounce box strawberry-flavored instant gelatin
15 ounces frozen strawberries in sugar, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water

Combine cake mix and gelatin in a large bowl. Using an electric mixer on medium speed, beat in pureed strawberries, eggs, oils, and water until smooth. Pour batter into pans, dividing the batter equally between them.

( I used 2- 8 inch pans.)

Bake 25-30 minutes at 350 until a wooden pick inserted in the middle comes out clean.

Cool in pans 15 minutes. Then, remove from pans and cool completely on wire racks.

--------------------------------------------------------------------------------

Strawberry Cream Cheese Frosting

1/4 cup butter, softened
8 ounces cream cheese, softened
3 ounces frozen strawberries in sugar, thawed and pureed
6 cups confectioners’ sugar
strawberries for garnish (optional)
With an electric mixer, beat butter and cream cheese at medium speed until creamy. Beat in strawberries. Gradually add confectioners’ sugar and beat until smooth.

Spread frosting on cake, covering between layers, on top, and on the sides. Garnish with fresh strawberries.
