Giant Cookie....

These are so fun I can't believe I have never posted one before!

This one has Chocolate, Peanut Butter and Butterscotch Chips added in.

NOTES......I like to buy the inexpensive pizza pans( $ 1) and bake on that and after it cools I wrap in cellophane and tie with a fancy ribbon and then give that to who ever this goes to as a bonus gift!

You have no mess!

If you need something smaller just make two 5-6 inch cookies out of this recipe!

You can even decorate your cookie with butter cream icing............

The possibilities are endless with what you can do with these from add in's to decorating.
This one was just going to hubby's crew so I left it plain and simple !

*Makes 1 giant cookie

INGREDIENTS:
1/2- cup white sugar
1/2 -cup packed light brown sugar
1/2 -cup butter, melted and cooled
1- egg
1/2- teaspoon soda
1/2- teaspoon salt
1- teaspoon vanilla
1 -1/2 cups all purpose flour
1- cup chocolate chips( or your favorite variety... I use about 2 cups worth)

DIRECTIONS:
Preheat oven to 350 degrees.

In a medium bowl, cream together the sugars and butter. Add the egg and vanilla and mix. Add the dry ingredients and mix well. Fold in the chocolate chips.

Line a large 12 inch pizza pan with foil or parchment paper and press the cookie into a circle. I press my cookie into a 9- 10 inch circle, about 1/4 to 3/8-inch thick. When it bakes, it spreads to about 11-12 inches, which fits perfectly onto a 12-inch round cardboard circle you can find at most craft stores.

If desired, top the cookie with M&M’s or any other garnishes. Bake for 13-16( mine most always take the full 16 minutes) until the cookie is lightly golden brown. Let the cookie cool completely on the baking pan – this helps the cookie stabilize and set so it can be easily lifted off the pan. Once cool, gently use the foil to lift the cookie off the pan.

I can't believe I never posted this recipe Yet!!
I was making it for Super Bowl and saw I never posted this.
Oh well here it is now!!
Enjoy!!

1 package (8 Oz.) Cream Cheese, Softened
( very heavy taste can cut back to half the cream cheese)

1 Tablespoon Italian Seasoning

1 teaspoon Garlic Powder
1 cup Mozzarella Or Pizza Cheese

¾ cups Grated Parmesan Cheese

½ cans (about 8 Oz) Pizza Sauce
4 Tablespoons Chopped Green Pepper

2 whole Green Onions, Sliced
Skinny French Bread, Thinly Sliced
Olive Oil Spray
Garlic Salt, to taste

Preheat oven to 350*. Combine cream cheese, Italian seasoning & garlic powder. Spread in the bottom of your mini-baker. Sprinkle chopped veggies. Top with half the cheeses, then spread pizza sauce on top. Top with remaining cheese and a sprinkle of Italian seasoning. Bake 15 minutes.

While dip bakes, thinly slice ovals of french bread. Spray with olive oil and garlic salt. Bake at 350* for 5-10 minutes or until slightly toasted.

Serve dip hot with warm french bread ovals around it, allowing guests to schmear their own pieces.
To go with it we usually have a chopped toppings bar and we personalize them to our own taste or just eat like a cheese Pizza dip Yummy either way!
Enjoy!!
We love eating foods like this on our weekends when our schedule is more relaxed and care free and we can be out and about doing a variety of fun things!
I have been making this recipe for many years and kids love to help with this one as they love cutting the biscuits!

1 Lb ground beef or sausage (your meat of choice)

1 can pizza sauce

2 tubs biscuits (plain old biscuits nothing fancy)

2 cups Mozzarella cheese-shredded

1 -2 cups Cheddar cheese- shredded

Brown meat, drain and add pizza sauce.

Quarter biscuits and place into a greased 9x13 baking dish.

Top biscuits with meat/sauce mixture. And bake uncovered at 400 for around 20 minutes.

Make sure biscuits are ¾ of the way done.

Sprinkle with cheese and bake until hot and bubble around 10 minutes.

Options…add any of your favorite toppings either in the meat sauce mixture or on top with the cheese!

Ooey Gooey Fudgy goodness!

We have had record hot temperatures around here and we had a storm come through and the temperature dropped down into the low 60's for "a' day so that meant time to bake !
These have been around for a while but I have never posted any in my dessert set so here they are :)

Fudge Revel Bars
1 c. butter
2 eggs
2 c. brown sugar
1 tsp. salt
1 tsp. baking soda
2 1/2 c. flour
3 tsp. vanilla
3 c. quick oats
Cream together the butter, brown sugar, and eggs. Add the vanilla. Add the salt, baking soda, and flour. Mix. Add oats and mix well. Press 3/4 of the dough into a greased cookie sheet.

(I use a 9x13 pan for a thicker bar and a 11x15 for a thinner bar)

To make then on the "thin” side bake them on a greased cookie sheet.

Fudgy Goodness
1 can Sweetened Condensed Milk
1 pkg milk chocolate chips (can use semi sweet)
1 Tbsp. butter
1/2 tsp salt

Put all into a microwave safe bowl and microwave for 1 minute and stir. Keep cooking at 30 second increments and stirring until melted. Pour over the dough and spread out. Sprinkle the rest of the dough over the fudge. Bake at 350 for around 25 min.

Baking will depend on the pan your using.

2 Ingredient Lemon Bars
Oh yeah you read that right only Two simple ingredients to make these melt in your mouth ( middle of the pie) lemon squares!

Yep this is like you cut your self a slice right out of the middle of the pie!

This is all you need:
1 box angel food cake mix( I use Betty Crocker)
2 cans lemon pie filling (the recipe originally called for only 1 can)
I used two 21 oz cans of Comstock pie filling ( total of 42 oz)

Mix dry cake mix and cans of pie filling together in large bowl.

I just mixed it by hand...

Pour into greased 9 x 13″ baking pan.

Bake at 350 degrees for 25 minutes or until top is starting to brown.

NOTE...Mine took the full 25 minutes to get done and did not brown on top at all :))

Cool on wire rack and sprinkle with powered sugar. It has a melt in your mouth spongy texture.

I have come across this recipe in a few different places so thanks to those who shared this yummy recipe!

Explore!!!

NOTES....Please know that for what ever reason this recipe does not work for everyone!
This recipe also has a lot of fav's so I dont want to block it for those that enjoy it.
I have no idea why it turns out perfect for some and not for others it turns out perfect for me everytime!

Super simple and tasty.
It's also yummy if you top it ( or make up a batch for a side)with Salsa and shredded lettuce black olives Guacamole and like that :))

Taco Pie

· 1 can Crescent Rolls (8 Ounce Can)

· 1 pound Ground Beef

· 3 cups Doritos, Crushed, Or More To Taste, Divided Use ( I used 2-3 cups for over the crust and 3 Cups for the topping)

· 1 cup Sour Cream

· 1-½ cups Shredded Mexican Cheese I always use extra cheese)

Preheat oven to 375F.

Set out crescent rolls for easier spreading.

Brown hamburger on the stove with taco seasoning. Cook over medium high heat until the meat is browned. Then drain any grease.

Spread crescent rolls in a pie plate to form a crust, covering the bottom of the dish and going up the sides with the dough. Put a layer of crushed Doritos as the bottom layer, adding them until the crescent dough is nicely covered. Add all of the meat, then layer your sour cream and Mexican cheese. Top with more crushed Doritos. Bake for 20 minutes or until crust is golden and cheese is melted. Let set for 5 minutes before cutting.

I Bake at 350 for a good 30 minutes( depending on pan size or till bubbly!

This is one of our favorite pasta casseroles!
Simple and you can make it some what different everytime by what you add in.
IMPORTANT...It makes enough for TWO casseroles!
It freezes wonderful and gives you another quick dinner for a later date !
It's wonderful with Garlic Cheese bread and a salad !

Pasta Casserole

2 - lbs ground beef
1 - 48 oz jar spaghetti sauce( Or your own homemade sauce)
2 – tablespoons sugar( we like more )
1 (16 oz) - pkg medium egg noodles
1/2 - cup margarine or butter
½ - tsp onion salt (or onion powder)
½ - tsp garlic salt (or garlic powder)
½ - cup grated Parmesan cheese
1 - 12 oz pkg shredded mozzarella cheese

Preheat oven to 350º Brown meat and drain fat. Add spaghetti sauce and sugar to meat; simmer 20 minutes. Cook noodles as directed (AL dente); drain and toss with margarine, salts and Parmesan cheese. Spray two 9x13 pans with non-stick spray. In both pans layer half the sauce, all the noodles, rest of sauce; top with mozzarella cheese. Cover with foil; bake 45 minutes.

*You can also add some sautéed green bell peppers, onions and mushrooms to the sauce..
I add in whatever I happen to have in the house.

*Note: Since this recipe makes enough for two casseroles I always freeze one for a later dinner!
Just sit out for maybe 30-45 minutes and then heat up at 350 for maybe and hour or so !

My hubby loves desserts that have little to no icing ( what ??) LOL!
This was perfect for him !
www.foodnetwork.com/recipes/ina-garten/sour-cream-coffee-...

Sour Cream Coffee Cake

12 tablespoons (1½ sticks) unsalted butter at room temperature
1½ cups granulated sugar
3 extra-large eggs at room temperature
1½ teaspoons pure vanilla extract
1¼ cups sour cream
2½ cups cake flour (not self-rising)
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt

For the streusel:
¼ cup light brown sugar, packed
½ cup all-purpose flour
1½ teaspoons ground cinnamon
¼ teaspoon salt
3 tablespoons cold unsalted butter, cut into pieces
¾ cup chopped walnuts, optional

For the glaze:
½ cup confectioners’ sugar
2 tablespoons real maple syrup
Preheat the oven to 350° F. Grease and flour a 10-inch tube pan.
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, and then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
Mine took closer to 45 minutes!

Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners’ sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

Cook just till done..Do not over cook!
Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
5. For the icing: In a small bowl, beat cream cheese, butter, maple syrup, cinnamon and cardamom until smooth and creamy. Add confectioners’ sugar and mix well. Frost cake with icing.
Storage:
Store covered in refrigerator for up to 2 days. Bring to room temperature before serving.
Notes:
1. This icing is a little on the thin side and is not able to be piped. If you find the consistency to be too thin for your taste, gradually add in a little more confectioners’ sugar.
2. If you enjoy nuts, pecans and walnuts both pair well with this recipe. Simply fold in a ½ cup of chopped nuts before pouring the batter into the pan.

This may very well be our new favorite cookie recipe!
When you bite into it you get the Peanut Butter and Choc Chip flavor right up front then as you chew you get that underlying oatmeal flavor and texture that is so Yummy!
It gives you a crisp bite into a soft chewy cookie..Amazing recipe!

Peanut Butter-Oatmeal -Chocolate Chip Cookies

Makes about 20 cookies

1 cup all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
½ cup creamy peanut butter
½ cup granulated sugar
1/3 cup light brown sugar
½ teaspoon vanilla extract
1 egg
½ cup rolled oats
1 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking soda and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
4. Drop heaping Tablespoons of dough onto prepared baking sheets about 2 inches apart. Bake for 10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature.
NOTE…
The cookies will not look “done” when you pull them out of the oven, but they will continue to bake on the hot baking sheets out of the oven. If they are slightly brown, the edges look just set and they are puffy in the middle they are ready to come out!
Do not over cook!

This were super delicious, more like a gourmet brownie..( or ganache topped fudge) LOL!

Chocolate Brownies

Chocolate Brownies: Preheat oven to 325 degrees F (165 degrees C) and place rack in center of oven. Butter, or spray with a non stick vegetable spray, an 8 inch (20 cm) square baking pan.

Chocolate Brownies:

4 ounces (120 grams) unsweetened chocolate, coarsely chopped( I used semi sweet)

1/2 cup (113 grams) unsalted butter cut into pieces

1 cup (200 grams) granulated white sugar

1 teaspoon pure vanilla extract

2 large eggs

3/4 cup (95 grams) all-purpose flour

1/4 teaspoon salt

Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water. Remove from heat and stir in the sugar. Next, whisk in the vanilla extract and eggs, one at a time, beating well after each addition. Finally, stir in the flour and salt.

Pour into the prepared pan and bake for about 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and let cool on a wire rack.

Chocolate Ganache:

3 ounces (90 grams) semi sweet chocolate, chopped( I used 2 ounces semi-sweet and 1 ounce unsweetened)

1/3 cup (80 ml) heavy whipping cream

1 tablespoon (14 grams) unsalted butter

Chocolate Ganache: Place the chopped chocolate in a medium sized stainless steel bowl. Heat the cream and butter in a small saucepan over medium heat. Bring just to a boil. Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir with a whisk or spoon until smooth. Let cool to room temperature and then spread the ganache over the brownies. I like to store these brownies in the refrigerator. They can also be frozen.

Makes 16 brownies.

This of course is Delicious!
How can it not be with 3 large butterfinger candy bars added...and yes you can taste the chunks of butterfinger inside!

Ingredients
1 (18.25-ounce) package milk chocolate cake mix
2 (2.1-ounce) Butterfinger candy bars, finely chopped and divided( I used 3..1 for garnish)
1 (14-ounce) can sweetened condensed milk
1 (12.25-ounce) jar caramel ice-cream topping
1 (8-ounce) container frozen nondairy whipped topping, thawed ( I used 16 oz)
Garnish: chopped Butterfinger

Instructions
1.Preheat oven to 350°. Spray a 13x9-inch baking pan with nonstick baking spray with flour.
2.Prepare cake mix following package directions. Add 1 chopped Butterfinger to batter, stirring well. Pour into prepared pan, and bake as directed on package. Let cake cool for 5 minutes. Using the handle of a wooden spoon, poke holes in cake in 1-inch intervals, poking halfway through cake. Pour condensed milk then caramel topping evenly over cake. Sprinkle 1 chopped Butterfinger over caramel. Cover, and chill. Before serving, spread whipped topping evenly over cake. Garnish with chopped Butterfinger, if desired. Cut into squares to serve.
Short Cut Apple Danish!!

If you need a fast and easy last minute recipe that's also yummy this is for you !
I needed a simple last minute dessert to take over to my elderly neighbor I help out often..
This could ( should) look way prettier but I had to make sure it was on the bulky side for her to eat ( broke her wrist -poor dear) so I went for that pick up eat and enjoy look this time:))
But if you make them you can coil them like it should be and not over " stretch-dent" them
Oh and I left off the glaze drizzle for her .
Was just as yummy though as if it were pretty :))

Short Cut Apple Danish..

2-Tubes Crescent Rolls
I -can Apple Pie Filling
2-Tbsp Butter Melted
Cinnamon Sugar ( 2 -tbsp granulated sugar and 1- tbsp cinnamon)

Glaze

1/2- C powdered Sugar
1-tsp Vanilla

3-4 tsp Milk

Preheat Oven to 350

Separate Dough into 8 rectangles and seal perforations
Spread melted butter over Crescent Rolls and sprinkle with Cinnamon Sugar mixture

Roll up from long side and pinch edges to seal. Holding one end loosely coil each, now you want to get in there with your fingers and spread out the dough some to make room for the filling.
Just pull and stretch to make a nice dent in the middle.
Place on cookie sheet sprayed with non stick spray.

Open your can of pie filling and cut the apple slices into smaller chunks.
Top each of your coils with 2-3 Tbsp Apple pie filling. (Almost overfill)
Top with a sprinkle of Cinnamon sugar mixture.
Bake for 15- 18 minutes or till lightly browned..

For the Glaze.
Mix Powered sugar vanilla and milk till smooth and drizzle over warm Danish.
Taste best served warm.
These are great with Cherry, Strawberry or Peach also just leave out the cinnamon -sugar in the Cherry and Strawberry.
