I actually much prefer to shoot in black and white. In my opinion colors are less appealing and distract from the rest of the image. When I shoot I usually know i will turn it black and white before hand. The best thing to do is to find something you know will give nice contrast in the end. I usually forget about the contrast until I end up editing and realize it has none. I usually just shoot something I think has a cool composition, which really is an important thing too.

I recommend taking a look at Michael Levin's photos. He is a genius at contrast and always finds these extreme white objects on black backgrounds.

I shoot RAW format as well; IMO it's the best way to capture better dynamic range compared to jpeg, tiff, or whatever else may be available. I agree with in using the channel mixer for b&w conversions, it seems a bit less destructuctive on the image and produces a more cleaner one from what I've notice. As far as intentionally shooting for black and white; I feel and I shoot for the quality of light and how it is affecting the scenery, which I find to be best at either near dawn and near dusk. Unless I am doing a daytime long exposure shot with water, in which case I stack a really strong neutral density filter (B+W ND110) and some ND grads.
