The two-step valve lets carbon dioxide escape, without letting air back in the carboy, which would skunk the beer.

The original gravity is the potential amount of alcohol to beer can contain. My wort came out to 1.060 or roughly 8% potential ABV. It'll certainly be lower than that.

The first step in the homebrew process is steeping the grains. The mixture of grains goes in a mesh sack, like a giant tea bag, so you can soak it at 150-160º F for 45 minutes, and throw it away easily when it's done.

I checked the temperature a few times to make sure it stayed within the 150-160º range.

Leaving the pot open and putting it over low heat seemed to balance out well.

Brew Pot

My new 30 Quart brew pot to boil some wort. The "tiny" pot to the left only holds 2 gallons, and was insufficient.

Rolling Boil

After the grains were steeped, I added enough water to bring the mixture to 5 gallons. Then, I brought the whole pot up to a rolling boil.

Once it hit 212º F, I added in the malt extract and maple syrup. I couldn't photograph the malt as I poured it, so picture a ribbon of pure caramel pouring into the pot, curving as I stirred.

The water quickly became a deep brown. The smell was kind of like baking bread, but also reminded me of Chinese restaurants steaming dumpings in bamboo pots. SOrt of woodsy.
