A peach-spice cake that's wheatless, vegan, VERY low fat, whole grain, but it doesn't taste healthy!! This loaf is incredibly moist, full of fruity flavour and has little pops of sweet and spicy ginger just for kicks. This concoction also makes great jumbo muffins

"Mom's Excellent Tofu Adventure"
Her first venture into cooking tofu at home, I gave my mom a (ahem, *nutritionist created*) recipe for OJ, maple and garlic-marinated "steaks" of tofu, placed over a bed of green beans and onions and baked to golden deliciousness. She had them over brown Basmati rice for lunch this week and liked them so much she's making them again!

Recipe will be in my upcoming cookbooklet, available for sale on www.wix.com/reidbee/new-trition

This year's mincemeat - I made 2 1/2 litres of it this morning, letting it simmer away for a good 3 hours or so before canning it for Christmas baking! This season's incarnation used both green tomatoes (like my winning mincemeat recipe) and rhubarb, along with fresh apples, honey, molasses and a hefty dose of rum. Hey, you can't go wrong with booze, right??

This year's mincemeat - I made 2 1/2 litres of it this morning, letting it simmer away for a good 3 hours or so before canning it for Christmas baking! This season's incarnation used both green tomatoes (like my winning mincemeat recipe) and rhubarb, along with fresh apples, honey, molasses and a hefty dose of rum. Hey, you can't go wrong with booze, right??
